Cut the tofu lengthwise into three or four large rectangles. Lay the chunks on a clean kitchen towel on top of a cutting board. Top with a second towel. Weight the tofu with another heavy cutting board or a heavy skillet. Tilt the bottom cutting board a bit toward a sink to allow draining. Let the tofu sit for an hour or two. Changing the towels once during the draining process will give you a firmer tofu, but it isn’t necessary. When it’s drained, place the tofu in a shallow pan.

Mix all the remaining ingredients (except the oil for the grill) in a small bowl, then pour the mixture over the tofu. Lift the tofu a bit to make sure that marinade gets all over it. Let it marinate, refrigerated, for 30 to 60 minutes.

While the tofu marinates, prepare a grill or grill pan (a heavy pan that allows you to “grill” food indoors) over medium heat. Lightly oil the grill or grill pan.

Cook the tofu for about 3 minutes on each side, turning once. Avoid turning more than once to keep the tofu from breaking up.

Variation: Oven-Baked Tofu

Follow the recipe for Grilled Tofu, but when you get to the step of heating the grill, preheat the oven to 350 degrees instead. Lightly oil a baking sheet and top with the tofu. Bake for 10 to 15 minutes or until thoroughly heated and dry.
